There is nothing better than the products of the earth, they are unique for the love with which they are born and the dedication with which they are collected.
Today I am going to prepare a delicious salad with vegetables from my garden: fresh vegetables with a drizzle of Ibizan olive oil from the olives of our very own trees. Some authentic flavours of Vinya den Palerm, that you will not find anywhere else.

In Vinya de Palerm we have many trees, plants and crops. The farm is surrounded by hundreds of olive trees, from which we get lots of olives to make a tasty oil.
For thousands of years, the production process has been the same and it is a relatively easy one.
Olives are picked from the trees between November and January, depending on the year. Then the olives are ground and beaten to separate the pulp from the olive paste. From this paste liquid oil is made following a process of separation. And, believe me, when it is home-made, it is always tastier.
Besides the olive trees, in Vinya we have planted some of the islands typical trees: almond, fig and carob. In January, when the almond trees bloom, the entire farm is dressed in white, and it is wonderful to go for a walk around the North-West of the island.
We also have many fruit trees, and at this time, we pick lemons, oranges, avocados, apricots and persimmons. Persimmons are my favourite and you always have to pick them when they are still a bit hard so they can mature in your fridge.
This fruit has been cultivated for thousands of years in Japan and China, and only appeared in Europe in the nineteenth century. It grows quite well in Ibiza, due to the islands mild temperatures. In Spanish, persimmons are also called “palosanto”, not to be confused with its English translation “rosewood” because it has a very different origin.
It actually comes from the time of year persimmons are recollected, late October, just in time for the festivity of All Saints, so it was said to be “for the Saints” which in Spanish is “para los santos”, from there it became “pa los santos” and then “palosanto”.
And, finally, let’s not forget summer fruits. When the heat begins, we are fortunate to have watermelons and melons. You’ll love it when you come to our rural hotel, because we usually prepare delicious fruit salads, which all our guests love!
So, I have olive oil for my salad … but I don’t have the vegetables!
I’m leaving you now, I have to go to the garden where we plant orchard vegetables like tomatoes, lettuce, aubergines, courgettes, potatoes, onions and carrots.
